Golden Raisin Scones
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
pinch of salt
3 tablespoons unsalted butter (chilled)
1/4 cup sugar
5 ounces buttermilk
3 tablespoons milk
1/2 Cup Golden Raisins
Preheat oven to 450 degrees F.
Stir together flour, baking soda, cream of tartar,
and salt. Cut the butter into pieces
and place in flour mixture. Using a pastry blender,
cut the butter into the flour until mixture resembles
fine crumbs. Combine raisins and sugar. Add to dough. Gradually stir
in buttermilk, mixing to light dough.
Turn dough onto lightly floured surface, and knead lightly until
smooth. Roll to 1/2-inch thickness and score the dough
into 8 wedges with knife.
Place on ungreased baking sheet.
Brush top of scone with milk. Bake in top third of preheated oven
for 10 minutes. Cool on wire rack. Recut if necessary.
Serve with clotted cream, creme fraiche or sweet butter
and homemade preserves.
